Pavoni Gourmand Line: born from collaboration with great chefs

The Gourmand line was born from direct dialogue between Pavoni and internationally renowned chefs and pastry chefs: Paolo Griffa, Leonardo Di Carlo, Gianluca Fusto, Davide Oldani, Felix Lo Basso, Fabrizio Fiorani and Franco Aliberti. Each cavity is validated in a professional laboratory to guarantee details — veins, texture, profile — that translate directly onto the finished plate. With over 75 years of Italian production, Pavoni is the reference point for patisserie and high-level foodservice.

Platinum silicone: superior performance to standard silicone

Pavoni platinum silicone offers measurable advantages over catalogue silicones. The thermal resistance covers the entire work cycle — from the blast chiller at -60°C to the oven at +230°C — without deformation or leaching of substances into food. The non-stick surface allows complete demoulding of leaves even with delicate preparations such as thin gelatin, isomalt or tempered chocolate, without release sprays.

  • Thermal resistance: -60°C / +230°C — compatible with blast chilling, freezing, oven cooking
  • Natural non-stick: clean demoulding without fats or release agents
  • Shape memory: returns to original geometry after each use, even after thousands of cycles
  • Hygiene: does not absorb odours, flavours or dyes; certified for professional food contact
  • Durability: resistant to intensive washing in professional dishwasher and daily laboratory use

Instructions for use and maintenance

First use: wash with warm water and neutral soap, dry completely before use.

Use: place the mould on a rigid flat surface (baking sheet or tray), fill the cavities with desired mixture, level with spatula, then blast chill or freeze according to recipe.

Demoulding: turn the mould over and gently press from the back to release the leaves without damaging them.

Cleaning: dishwasher safe in professional dishwasher or by hand with neutral detergents. Avoid abrasive sponges which can alter the non-stick surface.

Storage: store flat or hanging, away from direct heat sources.
