The Pavoni Almond GG013 is a professional food-grade platinum silicone mould with 30 almond-shaped cavities, designed for pastry, hotellerie and high-level catering. Each cavity measures 3.4 × 2.1 cm with a height of 1.1 cm and a volume of 4 ml — an ideal size for mignons, pralines, gourmet finger food and single portions. The mould is the result of Pavoni's collaboration with internationally renowned pastry chefs and masters: Paolo Griffa, Leonardo Di Carlo, Gianluca Fusto, Davide Oldani, Felix Lo Basso, Fabrizio Fiorani and Franco Aliberti.

The food-grade platinum silicone of the Pavoni GG013 guarantees thermal resistance from −40 °C to +280 °C, natural non-stick properties without the need for fats, and clean demoulding that preserves texture and surface details. The material is odourless, tasteless and free from substances that alter preparations. Compared to standard silicone, platinum silicone offers superior durability even with intensive use in a professional kitchen.
