The flat, thick and robust blade is ice-tempered and hardened to a Rockwell hardness of 55–56 HRC, guaranteeing a sharp edge that lasts. The Santoku shape — Japanese term for "three virtues" — makes it ideal for slicing, chopping and cutting meat, fish and vegetables with a single knife.
Dimpled anti-stick design
The grooves on the blade create small air pockets that prevent food from sticking during cutting: thin slices of salmon, mozzarella or vegetables slide away effortlessly, maintaining intact dish presentation.
