The Global G-09 is the professional 22 cm bread knife of reference for chefs and pastry chefs. The serrated Cromova 18 steel blade (18% chromium, 3% molybdenum, 1% vanadium, hardness 56–58 HRC) cuts crispy crusts, rustic breads, baguettes and pastry with surgical precision, without crushing the crumb. Monobloc construction, Japanese design signed by Komin Yamada, produced in Japan since 1985.

Cromova 18 Blade: Precision and Durability

The Cromova 18 stainless steel, Global's proprietary formula, combines exceptional corrosion and stain resistance with superior edge retention compared to standard stainless steel. The 22 cm serrated blade, long and thin, glides through the thickest crusts with fluid motion, preserving the internal structure of the bread intact — a result impossible to achieve with a traditional smooth knife.

Ergonomic Handle with Perfect Balance

The hollow Cromova 18 steel handle is filled with sand to achieve optimal balance between blade and grip. The monobloc construction without joints or rivets eliminates bacterial accumulation points and facilitates cleaning — a fundamental requirement in professional kitchens and foodservice facilities. The overall weight of approximately 161 g reduces fatigue during extended service.

Design by Komin Yamada

The Global G-09 was born in 1985 from the design of Komin Yamada, one of the most influential figures in Japanese industrial design. The dimple pattern on the handle — a distinctive feature of the entire Global line — guarantees a secure grip even with wet or oily hands, without sacrificing the brand's recognisable aesthetic.

Frequently Asked Questions

What is the difference between Global G-09 and Global G-09R?
The Global G-09 is designed for right-handed users, while the Global G-09R (mirrored version) is dedicated to left-handed users. The 22 cm serrated blade and technical specifications — Cromova 18 steel, hardness 56–58 HRC, weight approximately 161 g — are identical in both versions.
Is the Global G-09 also suitable for cutting pastries?
Yes. The 22 cm serrated blade of the Global G-09 is ideal for cutting sponge cake, glazed cakes, panettone and other pastries without crushing them, thanks to the sawing motion that does not compress the internal structure.
What is Cromova 18 steel and why is it superior to standard stainless steel?
Cromova 18 is Global's proprietary formula: stainless steel with 18% chromium, 3% molybdenum and 1% vanadium. Compared to standard 18/10 stainless steel, it offers greater hardness (56–58 HRC), superior edge retention and excellent corrosion and stain resistance.
How is the serrated blade of the Global G-09 sharpened?
To correctly sharpen the serrated blade of the Global G-09, a dedicated Global knife sharpener or fine-grit water stone is recommended. Hand washing is always preferable to the dishwasher to preserve the edge over time.
Is the Global G-09 suitable for professional use in foodservice?
Yes. The monobloc Cromova 18 steel construction — without joints or rivets — eliminates residue accumulation points, simplifies sanitation and meets professional kitchen hygiene requirements. The balanced weight of approximately 161 g reduces fatigue during extended service.
