The ILSA Neapolitan Coffee Maker — known in the South as «a cuccumella» — is a slow percolation extraction method that produces coffee with an intense aroma and delicate body, a flavour profile impossible to replicate with a Moka pot. Made of 99.5% aluminium with heat-resistant bakelite handles, the 3-cup version signed ILSA brings over sixty years of authentic Italian tradition to the table.

Materials and Construction

  • 99.5% high-quality aluminium: uniform heat conduction and durability over time
  • Heat-resistant bakelite handles for a secure grip even when tipping over
  • Capacity: 3 cups
  • Produced by ILSA, a historic Italian brand active since 1955 in the professional and domestic coffee sector

How to Prepare Coffee with the ILSA Neapolitan Maker

The Neapolitan method is simple and fascinating: no pressure, just gravity and time.

  1. Fill the water tank until half a centimetre below the side hole
  2. Insert the medium/coarse ground coffee into the «jacket» and screw on the filter lid
  3. Assemble the filter group in the tank and insert the collection container, aligning the handles
  4. Place on heat: when steam comes out of the side hole, flip the coffee maker over
  5. Wait 5–6 minutes for slow and fragrant percolation
  6. Remove the filter group, place the lid and serve the coffee

Note on grind size: use a medium/coarse grind, not fine as for a Moka. It's the detail that makes the difference between a mediocre result and authentic Neapolitan coffee.

Why Choose the ILSA Neapolitan Maker

  • Aromatic and full-bodied coffee with a distinct flavour profile compared to a Moka: gravity extraction, no pressure
  • Italian tradition since 1955: ILSA is a recognised reference in Italian coffee production
  • Disassemblable construction: easy to clean and reassemble in every component
  • Ideal as a gift for coffee enthusiasts and Italian culture, and as a service tool in hospitality contexts that value the ritual of traditional coffee

Frequently Asked Questions

What is the difference between the Neapolitan Coffee Maker and the Moka?
The ILSA Neapolitan Coffee Maker uses a gravity percolation method without pressure: hot water slowly descends through the ground coffee after flipping. The result is coffee with intense aroma and more delicate body compared to the Moka, which instead extracts under steam pressure. The recommended grind size is medium/coarse, not fine.
What grind size is used for the ILSA Neapolitan Coffee Maker?
The ILSA Neapolitan Coffee Maker requires a medium/coarse grind, coarser than that used for a Moka. Too fine a grind impedes percolation and alters the coffee's flavour profile.
Is the ILSA Neapolitan Coffee Maker suitable for induction?
The ILSA Neapolitan Coffee Maker in 99.5% aluminium is not compatible with induction cooktops. It works on gas, electric and glass ceramic hobs.
How do you disassemble and clean the Neapolitan ILSA?
The coffee maker disassembles completely into its parts: water tank, filter group with «jacket» and filter lid, and collection container. All components wash easily by hand with warm water.
Is the ILSA 3-cup Neapolitan Coffee Maker suitable for the foodservice sector?
Yes. The ILSA 3-cup Neapolitan is indicated for bars, restaurants and accommodation facilities offering traditional Neapolitan coffee as a service experience. The 99.5% aluminium construction with bakelite handles guarantees resistance and safety for daily professional use.
