How to Prepare Coffee with the ILSA Neapolitan Maker
The Neapolitan method is simple and fascinating: no pressure, just gravity and time.
- Fill the water tank until half a centimetre below the side hole
- Insert the medium/coarse ground coffee into the «jacket» and screw on the filter lid
- Assemble the filter group in the tank and insert the collection container, aligning the handles
- Place on heat: when steam comes out of the side hole, flip the coffee maker over
- Wait 5–6 minutes for slow and fragrant percolation
- Remove the filter group, place the lid and serve the coffee
Note on grind size: use a medium/coarse grind, not fine as for a Moka. It's the detail that makes the difference between a mediocre result and authentic Neapolitan coffee.
