NEWCOOKMATICPAV) is the professional tartlet machine that moulds and cooks simultaneously shortbread, brisée, sablée and choux pastry bases — up to 700 mini tarts per hour — eliminating counter-moulds, pre-baking and manual variability. How the Pavoni New Cookmatic works

Two interchangeable heating plates — upper and lower — close over the dough, shaping and cooking it on both sides in just a few seconds. The result is a perfectly moulded hollow base, uniform and ready to fill, with no distortions and no need for weights or auxiliary moulds.

The digital electronic interface allows precise setting of temperature and cooking time, ensuring product standardisation and consistent quality even during lengthy continuous production runs. Plates mount and unmount without tools in just seconds, enabling format changes without stopping the line.

Guide to interchangeable plates

Plates are sold separately from the machine. To start production, at least one pair (upper + lower) is required. All original Pavoni plates in the New Cookmatic range are mutually compatible and interchangeable without tools.

Are the plates included in the New Cookmatic?
No. The Pavoni New Cookmatic is sold without plates. To start production, at least one pair of plates (upper + lower) is required, available for separate purchase. All original Pavoni plates in the New Cookmatic range are compatible with each other.
How many tartlets does the Pavoni New Cookmatic produce per hour?
With the 30-cavity plates (e.g. Plate 46 or Plate 52), the New Cookmatic produces up to 700 mini tartlets per hour. Actual productivity depends on the selected plate format and the type of dough used.
Does it require a special electrical connection or an extraction hood?
No. The Pavoni New Cookmatic connects to a standard 220/240 V single-phase socket. It does not require a hood or special ventilation. 110 V or 380 V versions are available on request.
Can the Cookmatic also be used for choux pastry?
Yes. With dedicated Choux plates — Choux Plate 01 (3.2 cm cube, 30 cavities) and Choux Plate 02 (3.2 cm cylinder, 30 cavities) — the New Cookmatic produces cubic choux, éclairs and modern finger food with the same precision as shortbread tartlets.
How long does it take to change the plates?
The interchangeable plates of the Pavoni New Cookmatic mount and unmount without tools in just seconds, allowing format changes without stopping the production line. You can purchase multiple pairs of plates and switch from one format to another during the same work session.
